Ingredients

  • Osso Buco (veal or beef shanks)
  • Fresh rosemary
  • Fresh thyme
  • Garlic cloves
  • Black pepper
  • Coriander
  • Argentine Malbec wine
  • Vegetables (onions, carrots, celery)
  • Homemade beef stock 

Preparation Steps 

  1. Sear the Meat: Begin by searing the Osso Buco on all sides for 3-5 minutes. A grill imparts a smoky flavor, but a pan works just as well.
  2. Prepare the Dutch Oven: Place the seared meat into a Dutch oven, adding in the chopped vegetables, fresh herbs, and garlic.
  3. Add Liquid: Pour in the Malbec wine and beef stock, ensuring the meat is partially submerged to keep it moist during cooking.
  4. Cook Low and Slow: Preheat your oven to 180°C (356°F) and cook the dish for 2 hours. Check after 1 hour, adding more wine or stock if necessary.
  5. Serve and Enjoy: Once the meat is tender and falling off the bone, serve it hot, garnished with fresh herbs.
