As I sit at my desk and type this article, one the first of 2024, I am ambitious to continue my journey this year showcasing the Argentine BBQ culture, and one of the keys to understanding the Argentine Asado is the term “Parrilla Argentina”.

The Parrilla Argentina is much more than just a grill. It’s the backbone of a whole community, the Parrilla is the gathering point and the masterpiece of a large percentage of the Argentine community.

Let’s dive in and understand everything about the Argentine Parilla.

What Is the Parrilla Argentina

The “Parrilla Argentina” is the physical grilling spot where communities and families unite to celebrate the historical tradition of grilling. A Parrilla Argentina can be anything from two bricks supporting a flimsy metal grill made from rebar, to a complete outdoor kitchen grill with all the features.

The Quintessence of Argentine Barbecue

Parrilla Argentina embodies the soul of Argentine cuisine, a traditional method of grilling that transforms simple ingredients into culinary masterpieces. At its core, Parrilla Argentina is more than just a style of cooking; it’s a cultural symbol, revered across Argentina for its ability to bring people together.

The Parrilla: More Than Just a Grill

A “Parrilla” is both the physical grill used in this cooking method and the term for the barbecue itself. Its design, typically a large gridiron, allows for expert control over cooking temperatures. This versatile apparatus accommodates a variety of meats, from tender beef to chorizo, morcilla (blood sausage), and sweetbreads.

Then Different Types of Parrillas Argentinas

Here is a list of the different types of Parrillas Argentinas that are readily available in the US, UK and Europe market and also can be made at home DIY.

Parrilla Argentina The Parilla Asado is ultimately a T section spit. This is also known in Argentina as “A la Cruz” or “On a cross” This is because the meat is roasted vertically on a spit as seen in my video here.

Parrilla ChulengoThe Parilla Chulengo is the “state-of-the-art” most traditional Argentine BBQ. Its widely used here in Argentina as it is cheap to purchase or DIY, and is a great mix between a smoker and a normal grill. This Parilla is literally a 200lt barrel that has been refurbed to include a grill and firepit. Very versatile and is great for slow cooking and getting the smokey flavors into the meat.
Parilla FogonThe Parilla Fogon is generally a larger space that would have been traditionally used an open fire place or fire pit, but then later converted to suit the grilling purpose. These Parillas can be found in old “estancias” or cattle ranches from the later 1800s and early 1900s when the fireplace would have served two purposes. Heating and Eating! The Parilla Fogon is versatile and generally quite large making it a great choice for larger gatherings. The downside is that it isn’t very comfortable to use as you have to continually bend down to shovel the coals under the grill and attend to the meat.
